- Favorite carrot cake mix or recipe
- Favorite cream cheese frosting recipe
- Pecans, finely chopped
- Carrot icing decorations
- Mini 24-cup muffin pan
- Mini white baking cups
- Cooling grid
- Disposable decorating bags
DIRECTIONS:
- Bake mini cupcakes. Prepare carrot cake batter following recipe instructions. Bake and cool cupcakes in mini white baking cups.
- Prepare icing. Prepare cream cheese icing following recipe instructions.
- Decorate cupcakes. Prepare decorating bag with cream cheese frosting. Cut 1/2" from tip of bag. Pipe swirl on each cupcake.
- Carefully roll or sprinkle edge of icing with chopped pecans. Top with carrot icing decoration.
